Matiga och söta pajer är Lena Söderströms 12e bok på Semic. Ulrika hade turen att få göra bilderna av alla Lenas fantastiskt vackra och goda pajer. Det var hårt arbete under vintern i Lenas kök på Kungsholmen, men det var det värt.

Savory and Sweet Pies are book number twelve on Semic by Swedish food journaist/stylist Lena Söderstöm. Luckely Ulrika was the photographer. It was hard work in Lenas kitchen in a wintery Kungsholmen in Stockholm but it was sure worth the effort.

English recipe will follow

Päronpaj

1 förpackning kyld smördeg

1 pajform, ca 25 cm i diameter

Fyllning

2 dl grovriven mandelmassa

3 msk muscovadosocker

50 g smör, smält

4-5 päron

1/2 citron

4-5 msk florsocker

1 litet ägg

 

Fyllning

Rör ihop mandelmassa, socker och smör, använd gärna elvisp.

Skala dela, kärna ur och skär päronen i tunna skivor. Pressa över citronen, så att de inte blir bruna. Sätt ugnen på 200°.

Rulla ut smördegen och tryck ut den i formen. Jämna till degkanterna. Nagga botten och kanterna med en gaffel.

Bred ut mandelsmeten i pajskalet. Lägg på päronskivorna omlott och sikta ca hälften av florsockret över päronen. Pensla pajkanten med uppvispat ägg. Grädda pajen i nedre delen av ugnen tills degen fått fin färg och päronen är mjuka, ca 30 minuter. Sikta över resten av florsockret.

 

IN ENGLISH

Pear Tarte

Preheat oven to 200 C°/390 F°. Roll out a round ready made puff pastry sheet into a pie dish and clean the edges from remaining pastry. Pinch the dough with a fork. Make the filling by mixing 2/3 cup of grated almond paste or frangipane, 3 tbsp of muscovado sugar and 1/2 a stick of melted butter with an electric whisk. Peel and core 4-5 pears and slice them into thin slices. Add a little lemon juice to prevent discolouring. Now spread the almond filling in the pie shell and arrange the pear slices as picured. Dust some powdered sugar on the pears. Brush the pie edges with egg wash and bake in the lower section of the oven for about 30 minutes. Let cool. When serving add a little more powdered sugar on top.
