Pumpkin Pancakes

Beautiful golden and very tasty pancakes with more pumpkin than flour. Feels better than traditional pancakes in your tummy. Try something savory like quickly cooked lean and smoked ham together with the pancakes.

Serves 4

Preheat your oven to 200C°/390F°. Divide 1 kg/2 lb of butternut squash lengthwise and deseed. Place with cut side down on a baking tray lined with parchment paper. Bake for appr 30 minutes until very soft. Let cool and then scoop out the flesh into a large mixing bowl and . Mix 3 eggs and add to the pumpkin. Stir until well blended. Mix 1 dl/little less than 1/2 cup of whole meal spelt flour, 1 tsp of baking powder, 1 1/2 tsp of ground cinnamon and 1 pich of salt. Add the dry mixture to the pumkin mixture and stir until an even batter. Add appr 3-4 tbsp of batter at the time to a pan heated with a little rapeseed oil. Cook 2-3 minutes on each side and serve with some cooked smoked ham and maple syrup.
